Pork and Blueberry Bites

  • 500 g Pork Mince
  • ½ Cup Blueberries see note
  • ½ Tbsp. Tarragon (Dried)
  • ¼ tsp. Ground Fennel
  • ½ tsp. Celtic Sea Salt
  • ¼ tsp. Black Pepper
  • 1 Tbsp. Avocado Oil or Coconut Oil


  • Chop the blueberries into halves.
  • In a large bowl, combine the pork, blueberries, tarragon, fennel, salt and pepper.
  • Mix gently with wet hands, until everything is well combined. Don't over mix, it will toughen the meat.
  • Form the meat into 8 balls.
  • Place the oil into a large frying pan over medium high heat.
  • Fry the balls for 4 mins per side or until cooked through.


If blueberries are not in season, use frozen, just chop and mix through the meat.
