Bacon and Brie Frittata

This mouthwatering dish combines the irresistible flavors of crispy bacon and creamy brie cheese, all nestled in a fluffy, golden frittata. Whether you're hosting a brunch gathering or looking for a quick and satisfying meal idea, this frittata is sure to impress.

Ingredients

  • 200 g Bacon
  • 8 Egg (Large)
  • ½ Cup Heavy Cream
  • 2 Cloves Garlic (Fresh Clove) or 2tsp Minced Garlic
  • ½ tsp Salt
  • ½ tsp Pepper
  • 125 g Brie keep it cold until you need it

Instructions

  • Chop the bacon and cook in an oven proof frying pan until nice and crisp.
  • Remove the bacon, with a slotted spoon and drain on paper towel.
  • Leave about 2 tbsp. of the bacon fat in the pan, draining off the rest.
  • Let the pan cool down.
  • Whisk the eggs, cream, garlic, salt and pepper together in a large bowl.
  • Add 2/3 of the bacon to the egg mix.
  • Place the pan back on a medium/low heat, swirling the bacon fat around to coat the pan.
  • Pour the egg mixture into the pan, cook undisturbed until the edges are set, and the centre is still wobbly and loose.
  • Slice the Brie thinly and layer it over the top of the egg mixture, sprinkle the remaining bacon over the cheese.
  • Turn on the grill function of your oven, placing the oven rack on the second highest place.
  • Grill the frittata until it is puffed and golden brown, about 2-5 mins. Watch it carefully so it doesn't burn.
  • Remove from the oven, remember to use an oven mitt. Let it cool for a few minutes before cutting.

Notes

This can frozen for up to 3 months. Cut up into individual portion sizes for easy grab and go freezer meals!
