Keto Apple Chai Muffins

  • Preheat oven 180 deg C
  • Line muffin tin with liners
  • In a medium bowl combine the spices, apple, vanilla extract, golden monkfruit and mix to coat the apple. * See note
  • Add in the eggs, honey substitute, water and mix well.
  • In a separate large bowl, add baking powder, almond meal and salt, whisk until there are no lumps in the almond flour and everything is combined.
  • Fold the wet ingredients into the dry ingredients.
  • Divide the mixture evenly between the muffin tins.
  • Bake for 30-40 mins or until a skewer inserted comes out clean.

Notes

You can precook the apple and place in fridge or freeze for later use if that's easier
Just gently stew the apple mixture on low, no need to add any extra moisture. The apple will release its own as it gently cooks.
